- First wash the Dal and soak it for at least half an hour..
- In the meantime....Wash, peel and chop the vegetables..
- Heat oil in a pot and add whole dry chilli and then Cummin seeds. Once it starts crackling add the potato pieces saute it for few minutes..
- Then add ginger paste,saute it and add the chopped onion,saute it again for one or two minutes. Then add the carrot and saute for few minutes..
- Then add rest of the vegetables,saute it. Add the soaked Dal and saute it..
- Add salt,If required add little warm water and cook it nicely..
- After few minutes, add Turmeric, Cummin and coriander powder and give it a good mix. Add about 2 cups warm water and cover and cook for about 10 minutes..
- After the vegetables have softened and cooked, add the rolled oats and mix well, then add about 2 cups water, mix well. Add the green chillies and coriander too, cover and cook for 5-10 minutes..
- In between the cooking process add half table spoon butter too and continue cooking. Check salt. Stir it once or twice in-between. Once the oats gets cooked and your khichdi has thickened up, your Oats Moong Dal khichdi is ready. Serve it with a dollop of butter / ghee and coriander leaves with pickles etc..
